Oregon is a beautiful state with so much to offer. Here's an ideal itinerary for 3 days in Oregon:

Day 1:

Start your day by exploring the city of Portland. Visit the famous Powell's City of Books, one of the largest independent bookstores in the world. Then head over to the International Rose Test Garden, where you can see over 10,000 roses in bloom. After that, grab lunch at one of Portland's many food carts, which offer a variety of cuisines from around the world.
